Erik Chapman is the bar manager and head distiller at Seattle’s Sun Liquor. I had the opportunity to photograph Erik taking me through the steps of making shrubs.  To put it simply, it’s a process of creating your own syrups by mixing vinegar with other natural ingredients (in this case, he used rhubarb, cinnamon, and lemons). This was my first time sampling shrubs,  and I have to say I’m sold.  Since it’s all natural,  you don’t get the overly sweet taste of mass produced syrups.
